Super sweet (vegan) oatmeal chocolate chip cookies


Preheat oven to 375


In a small bowl -

1 3/4 cups flour

1 tsp baking soda (not powder)

1/2 tsp salt

In a mixing bowl -

1 1/4 cup packed brown sugar

3/4 cup vegetable oil (instead of 1 cup butter)

1/2 cup granulated sugar

Miiiiiix til creamy

Add in that mixing bowl -

2 tblsp soy milk

2 tsp vanilla extract

4 tblsp corn starch

2 tblsp water (This isn’t necessary but because there aren’t any eggs and butter to emulsify, it helps keep the dough together)

Miiiiiiix (x2)

Slowly add in the flour mixture from the beginning

Then mix in some -

2 1/2 cup oats

1-2 cups choc chips (if you’re into that sort of thing)


Put em on a greased cookie sheet - they don’t expand that much so no worries about space.

Bake for 9-15 min or until they’re a little bit crispy.  Let them cool for a few minutes and then transfer to a wire sheet to cool a lil’ more.
