carmelized cumin-roasted carrots in your mouf

so we get that this photo makes them look like hot dog pieces. but believe us, this recipe is delish!

All of the things you need:

  • 12 medium-to-large carrots, peeled, cut diagonally into half-inch pieces
  • 2 tablespoons extra-virgin olive oil
  • 1.5 teaspoons cumin seeds
  • 2 teaspoons coarse kosher salt
  • A bit o’ nonstick vegetable oil spray

All of the things you need to do:

Preheat oven to 400°F. Spray large rimmed baking sheet with nonstick spray.

Combine carrots and all remaining ingredients in large bowl; toss to coat. Spread in single layer on prepared baking sheet. Roast carrots until tender and lightly caramelized, turning carrots over once, 25 to 30 minutes.
